Pumpkin Spice Waffles

Ingredients
2 large eggs
180 ml milk
60 ml melted butter
120 g pumpkin purée
1 ½ tsp vanilla extract
130 g all-purpose flour
1 tbsp baking powder
10 g sugar
¼ tsp salt
1 ½ tsp pumpkin pie spice (or 1 tsp cinnamon, ½ tsp ginger and ½ tsp nutmeg)

Instructions
Preheat your waffle iron. In a large mixing bowl, beat the eggs. Stir in the milk, melted butter, pumpkin purée, and vanilla until smooth.
Add the flour, baking powder, sugar, salt, and pumpkin pie spice. Mix until just combined; small lumps in the batter are fine.
Spray the waffle iron with nonstick cooking spray. Pour batter onto the hot waffle iron (around 119 g per waffle, or adjust based on your waffle iron size). Spread the batter evenly with the back of a spoon.
Cook until the waffles are crisp and golden brown. Serve with your preferred toppings, and enjoy!

Using a stand or hand mixer, mix 1/2 cup cream cheese, 1/4 cup icing sugar, 4 tbs milk, and 1 tsp vanilla.
