Pear Blackberry Skillet Cobbler

Ingredients


For the fruit:

  • 1 orange, juiced

  • 50g brown sugar

  • 1 vanilla pod, split

  • 3 pears, quartered

  • 3 apples, cut into eighths

  • 250g blackberries

  • A splash of brandy (optional, for flambé)

For the dough:

  • 100g butter, cubed

  • 100g almond flour

  • 100g self-rising flour (or 1 cup all-purpose flour + 1 tsp baking powder + ¼ tsp baking soda + a pinch of salt)

  • 100g light brown sugar

  • Pinch of salt


Pear Blackberry Skillet Cobbler

Instructions

  1. In a 12-inch skillet (cast iron, but stainless steel works well too), combine the orange juice, brown sugar, and vanilla pod over medium heat. Stir until the sugar dissolves. Add the pears, apples, and blackberries to the pan, coating them in the syrupy mixture. Let the fruit cook for 5-7 minutes until slightly softened. (Optional) Add a splash of brandy and carefully flambé by lighting it briefly, then let the flame burn off.

  2. In a large bowl, combine the butter, almond flour, self-rising flour (or substitute), brown sugar, and a pinch of salt. Mix the ingredients until the dough comes together into a smooth ball. Divide the dough into 8 even portions.

  3. Preheat your oven to 180°C. Place the portions of dough on top of the fruit in the pan, covering most of the surface. Transfer the pan to the preheated oven and bake for 20-30 minutes, until the dough is golden and cooked through.

  4. Remove from the oven and let it cool slightly.


    Serve warm with a scoop of vanilla ice cream on the side.
