Beetroot hummus
Serves 4
Preparation time 20 mins
Ingredients
1 1/4 cup canned chickpea (1 400g can)
1 tablespoon tahini paste
2 1/2 tablespoons extra virgin olive oil
1/2 teaspoon cumin
1/2 teaspoon cayenne pepperÂ
1 teaspoon salt
Juice from 1/2 lemonÂ
60g of beetroot (roughly chopped)
1 garlic clove

Instructions
Add chickpeas, tahini and the rest of the ingredients into a food processor and blend until you reach a smooth texture. If too thick and lumpy, add one tablespoon of water at a time and continue to blend until desired consistency and texture are reached.Â
