Beef & Broccoli

Ingredients
400-500g Beef sirloin/striploin steaks, thinly sliced (or buy stir-fry sliced beef pack)
2 tbsp vegetable oil
3 garlic cloves, roughly chopped
3cm piece of ginger, finely sliced
2 dried red chilies, cut into small pieces
200g  broccoli, cut lengthwise
2-3 baby bok choy, halved
Steamed rice, for serving
Marinade
1 tbsp soy sauce
1 tbsp Chinese Shaoxing wine
½ tsp baking soda
3 tsp corn flour
Stir-fry Sauce
3 tbls cup oyster sauce
3 tbsp Chinese Shaoxing wine
1 tbsp soy sauce
½ tsp dark soy sauce
2 tsp sugar
1½ tsp ground black pepper
2 tsp white vinegar

Instructions
Step 1: Marinade the Steak
Combine the beef slices with the marinade ingredients. Mix thoroughly and let marinate for 10 minutes.
Step 2: Prepare the Stir-fry Sauce
Mix with the stir-fry sauce ingredients. Set aside.
Step 3: Cook the Stir-fry
Heat the vegetable oil in a wok or large frying pan over medium-high heat.
Add garlic, ginger, and dried chillies. Stir-fry for 10 seconds.
Add the beef, spreading the strips out quickly in the pan. Allow to sear for a minute before stir-frying. Repeat the spreading and stir-frying until the beef is almost cooked.
Add the broccolini and stir-fry for one minute.
Add the bok choy and stir-fry sauce. Stir-fry until the bok choy is just wilted and the sauce is thick and glossy.
Serve immediately with steamed rice.
