Vegan Malloreddus

Ingredients
280g fine semolina flour
130g warm water

Instruction
Place semolina in a large bowl, add a pinch of salt, and pour in warm water. Mix with a fork until crumbly, then form a loose ball with your hands. Knead on a clean surface until elastic and smooth (10-15 minutes). Form dough into a flat disc, wrap in plastic, and rest in the fridge for at least 30 minutes.
Take one-quarter of the dough, keeping the rest wrapped. Roll it into a rope the thickness of a pencil. Cut into pieces about 2.5-3cm (1-1¼in) long. Using a garganelli board or a regular chopping board, place a piece of dough on the board. Roll the dough along the lines of the board using your thumb, dough scraper, or table knife. Press down lightly, then push the scraper away from you to form a small roll. Place the shapes on a tray while you roll out the rest.
